专利说明:
The present invention relates generally to a cooking appliance and in particular a household cooking appliance for cooking culinary preparations, such as cakes. The product described is a cooking appliance which makes it possible, with pre-recorded programs and a manual program, to make cakes, cookies, meringues, pies. It also makes it possible to carry out a step of melting chocolate or butter which may be necessary for certain pastry preparations. It is known in the prior art the document EP0696430 which describes a multifunction device which incorporates a hollow dish which makes it possible to carry out various preparations. The appliance includes electric heating resistors and requires a significant amount of energy to heat the food to be cooked. This defect is aggravated with a pastry preparation, since a large quantity of dough is to be heated, which accentuates the need for electrical energy. In addition, the electrical resistors are on board a moving part, which provides a complex structure in terms of the electrical supply, with also an increased risk of failure of the electrical resistors, because making them mobile leads to shocks, which can damage these parts. An object of the present invention is to respond to the drawbacks of the prior art mentioned above and in particular, first of all, to provide a cooking appliance for pastry preparations which has an ability to receive preparations in an interchangeable mold, while guaranteeing uniform cooking. For this a first aspect of the invention relates to a cooking appliance for pastry preparations comprising a base and a cover hinged on the base between a first raised position for the introduction of a pastry preparation and a second lowered position to form a cooking box for the pastry preparation, the cover and the base each comprising a portion of the cooking box and heating means anchored to the portion of the respective cooking box, the cooking appliance comprising positioning means and holding devices arranged to position and maintain a removable mold, such as a silicone mold, in a cooking enclosure formed inside the cooking box when the cover is in the second lowered position, said cooking appliance being characterized in that the base includes: - A cooking hearth mounted movable relative to the cooking box portion of the base to contact a bottom wall of the removable mold, and arranged between the bottom wall of the removable mold received in the cooking space and the heating means from the base, - elastic return means, arranged to push the cooking hearth against the bottom wall of the removable mold. The cooking appliance according to the above implementation comprises a movable hearth and elastic return means which push the cooking hearth against the bottom wall of the mold, so that the heat is well distributed by the hearth cooking which forms a screen and a distributor between the heating means and the mold. Hot spots are avoided and cakes are baked evenly and precisely. In addition, if the removable mold is flexible or deformable (often an intrinsic characteristic of a silicone mold), the baking tray forms a support which prevents deformation due to the weight of the dough loaded in the mold: the cakes then have a better appearance and, for example, a uniform thickness. Advantageously, the cooking hearth comprises a plurality of protrusions, arranged to contact the bottom wall of the removable mold along lines or contact points. The contact between the cooking hearth and the mold is limited to lines or points of contact, which avoids transmitting heat by conduction, in order to avoid hot spots. Advantageously, the cooking hearth comprises a plurality of perforations. The heat can then easily be transmitted by convection with the establishment of an air flow between the resistors and the mold wall. Advantageously, the cooking hearth is a metal wall, such as an aluminum wall. Advantageously, the cooking hearth is an embossed sheet. Advantageously, the cover comprises an internal tank arranged between the heating means and the cooking space. Such a tank makes it possible to limit the volume to be heated, in order to require less energy and / or heating time. Advantageously, in the second lowered position, the internal bowl of the cover and the removable mold received in the cooking space form a cooking chamber. The cooking chamber then contains the cooking space, with the food to be cooked. Advantageously, the cover and the base each comprise a reflector, arranged to form a heating chamber surrounding the heating means and the cooking space, when the cover is in the second lowered position. The heat is confined, the volume to be heated reduced, so that the invention, for the same volume of cooking dough and a similar external size (the addition of reflectors does not require a lot of space), makes it possible to significantly reduce the amount of energy required, up to 50%, as well as the total cooking time. The device remains compact. Such a heating enclosure limits the total volume to be heated as well as the heat losses to the housing and the exterior of the cooking appliance. Advantageously, in the second lowered position, the reflector of the cover and the reflector of the base form a closed heating enclosure. The heating chamber is then an enclosed space, in the second position of the cover of course, which makes it possible to limit the losses of energy by convection for example. Of course, in the field of domestic cooking appliances, such an enclosed space may have some openings or gaps between the reflectors, of the order of a few tenths of a millimeter or even up to one or two millimeters. Advantageously, the means for heating the cover are arranged between the internal tank of the cover and the reflector of the cover. Advantageously, the heating means of the base are arranged between the cooking hearth and the reflector of the base. Advantageously, in the second lowered position, the heating enclosure has a volume of less than 5.5 liters. . Such a limited volume makes it possible to reduce the cooking time and the amount of energy. Advantageously, the reflector of the cover and / or of the base is metallic. Advantageously, the heating means are heating resistors, otherwise called electrical resistors. Advantageously, the cover is articulated on the base according to a pivot link arranged on a rear part of the device, the device comprising lateral handles and a control interface on a front part of the device, the appliance further comprising at least one vent arranged for discharging water vapor from the cooking enclosure towards the outside of the cooking box, at the rear of the cooking appliance. When baking a cake, a large amount of water must be evacuated in the form of steam, and the invention provides a vent which avoids letting the steam heat areas liable to be affected. by the user. In other words, the vent is arranged to evacuate water vapor generated during cooking elsewhere than forwards (where there is a handle, a man-machine interface, and potentially the user) or the sides of the device (where there are handles). The parts of the device that the user touches (handles, man-machine interface, etc.) are therefore far from the vent and hot steam flows. Advantageously, the vent is a conduit formed by a tube with a first end giving into the cooking enclosure, and a second end giving onto the outside of the cooking appliance. The tube passes through the space between the cooking chamber and the heating chamber, without communicating with. Water vapor for example cannot go into this space between the cooking chamber and the heating chamber, where the heating means are located, which preserves them. Advantageously, the cover and / or the base each include temperature measuring means. Advantageously, the cooking appliance for pastry preparations comprises cooking control means arranged to independently control the heating of the heating means of the cover and the heating of the heating means of the base. This implementation makes it possible to avoid a heating imbalance because the heat need is asymmetrical: a lot of heat to be supplied on the lower side (the base) where the dough to be heated is located, and little need at the top (the cover ) where most of the air is. Advantageously, the cooking box portion of the cover and the base is formed by at least one plastic cover. In other words, the external box is not the reflector: the latter is located between the external box and the cooking chamber. Advantageously, the elastic return means are a spring anchored on the base, and the cooking hearth is attached to the spring. The sole is directly held and positioned by the spring, which provides a reliable and economical solution. Alternatively or in addition, the cooking appliance comprises guide means, such as sliding pivots, arranged to guide the cooking hearth. Other characteristics and advantages of the present invention will appear more clearly on reading the detailed description which follows of an embodiment of the invention given by way of nonlimiting example and illustrated by the appended drawings, wherein : FIG. 1 represents a front view of a cooking appliance for pastry preparations according to the invention, comprising a base and a cover in the closed or lowered position on the base; Figure 2 shows the cooking appliance for pastry preparations of Figure 1 seen from above; Figure 3 shows the cooking appliance for pastry preparations of Figure 1 in perspective, with the cover in the open or raised position; 4 shows a side view in section of the cooking appliance for pastry preparations of Figure 1; Figure 5 shows a detail of Figure 4; Figure 6 shows the sectional view of Figure 4 in perspective; FIG. 7 represents a cooking hearth which equips the cooking appliance for pastry preparations of the preceding figures. 1 shows a cooking appliance for pastry preparations resting on a support 100 (a table or a work surface) and comprising a base 10 and a cover 20 in the lowered or closed position on the base 10. As shown in FIG. 3 shows, the cover 20 can also occupy an open or raised position, to give access to a cooking enclosure. In the present application, the open or raised position is called the first raised position, and the closed or lowered position is called the second lowered position. To be able to pivot from the first raised position to the second lowered position, the cover 20 is pivotally mounted on the base 10, by means of a hinge located at the rear of the cooking appliance for pastry preparations. , and which defines a pivot axis 20a visible in FIGS. 2 and 3. As shown in Figures 1, 2 and 3, the cooking appliance for pastry preparations comprises an outer housing formed by a cover housing portion 24 and a base housing portion 14, both typically made of plastic material. The cover 20 also includes lateral handles 25a and 25b, and a front handle 25c, in order to allow the user to easily open and close the cover 20. The cooking appliance for pastry preparations is also equipped with a man machine interface 15 (or a control interface) which for example comprises a display and control buttons to allow the user to define cooking cycles and start / stop the cooking appliance for pastry preparations. As can be seen in FIGS. 1 and 3, the man-machine interface 15 is located on the base 10, on the front face of the cooking appliance for pastry preparations. 3 shows the cooking appliance for pastry preparations with the cover 20 in the first raised position, so as to make accessible a cooking space where there is a mold 40 with several imprints, to receive and cook portions cake batter, to prepare cupcakes. As will be explained below, the mold 40 is removable so that it can be changed and / or cleaned easily. Typically, the mold 40 is made of silicone material for example, and is flexible, or easily deformable. For example, under the weight of the dough loaded in the imprints, it is common for the mold 40 to deform by several millimeters, especially if it is held only by its periphery. Figure 3 also shows an internal tank 21 of the cover 20, which comes opposite the mold 40 when the cover 20 is in the second lowered position, to close a cooking space. Indeed, Figure 4 and Figure 6 show a side view in section of the cooking appliance for pastry preparations, where we see the internal tank 21 of the cover 20 which is above and opposite of the mold 40, in order to form a closed cooking enclosure. Figure 4 and Figure 6 also show a reflector 22 and an electrical resistance 23 embedded on the cover 20, as well as an electrical resistance 13 and a reflector 12 located in the base 10. The reflector 22 and the reflector 12 are opposite one another, so as to form a heating enclosure which therefore contains the electrical resistances 13 and 23 (forming heating means) and the cooking enclosure formed by the internal tank 21 and the mold 40. Typically, the reflectors 12 and 22 are metallic, with at least their internal face arranged to reflect a heating radiation (shiny, or polished, or smooth wall). Figure 4 also shows a cooking hearth 16 which is mounted on a spring 17 forming elastic return means and which pushes the cooking hearth 16 against the bottom wall of the mold 40. Consequently, the cooking hearth 16 is located between the electrical resistance 13 and the mold 40, so that the heat from the electrical resistance 13 is distributed homogeneously by the cooking hearth 16 towards the mold 40. The well distributed heat makes it possible to cook the cakes formed in the mold cavities 40. Typically, the baking tray 16 is a metal sheet (aluminum, steel, etc.) possibly coated, and corrugated or embossed as shown in FIG. 7. The baking tray 16 also includes a multitude of perforations which allow air to pass from the electrical resistance 13 to the mold 40. The spring 17 also ensures that the mold 40 is supported by the cooking hearth 16, even if its height varies. The support function limits the deformations of the mold 40, and is ensured for several different heights of molds, which can therefore be interchanged without losing the support function. As the baking tray 16 is corrugated or embossed, the contact between the baking tray 16 with the mold 40 is made along contact lines, which limits the conduction of heat and avoids forming hot spots in the baking dough . The heating chamber formed by the reflectors 12 and 22 is therefore a closed space which includes the heating means and the cooking chamber without touching them, so that the space to be heated is of small volume and closed , which limits the amount of energy to be supplied, as well as the heat losses. In addition, the double-walled structure (baking chamber and heating chamber) makes it possible to homogeneously heat the baking space contained in the baking chamber, which gives cakes homogeneously baked and reproducible in an appliance. for compact pastry preparations. We can also note that the electrical resistors 13 and 23 are closer to the reflectors 12 and 22 respectively than the mold 40 and the internal tank 21 respectively, always to heat homogeneously with few hot spots in space Cooking. We can provide for example a volume of the heating chamber less than or equal to 5.5 liters, and for a cake of 1 kg or about 780 ml of dough before baking, we can make the following comparison: In a 38 liter oven it would take about 9.5 minutes to preheat to reach 200 ° C in fan heat then 50 minutes - 10 to achieve good cooking at heart in an aluminum dish, i.e. a total energy expenditure of 0.888 kWh. In the proposed device, the dish is placed cold in the cooking chamber and after 42 minutes we reach a good heart cooking is a total energy expenditure of 0.301 kWh. Cooking is therefore faster and requires less energy. One or more vents 31 (visible in Figure 5) are necessary for the evacuation of the steam produced during cooking. A cake, in order to form a crust, or cookies in order to be crisp, must be dried on the surface. The structure proposed by the present invention consists in crossing two walls (cooking enclosure and heating enclosure) to remove this water vapor. In fact, the vapor must be directed towards the outside of the product and not risk stagnating in contact with sensitive parts such as the heating elements. In addition, the structure proposed by the present invention consists in directing the hot steam and air to areas which are not used for gripping by the consumer, so as not to burn them. In particular, Figure 5 shows a vent 31, in the form of a tube, pass through the internal tank 21 and the reflector 22 of the cover 20 to guide steam and hot air towards the rear of the cooking appliance for pastry preparations , therefore at a good distance from the handles 25a, 25b, 25c and from the man-machine interface 15. Advantageously, it can therefore be provided that the mold 40 (typically a flexible silicone mold for example) is removable, and the internal tank 21 and / or the reflector 12 of the base 10 include docking forms or imprints to accommodate the mold 40 and position it correctly in the cooking chamber. Finally, there is provided in the base a temperature sensor which regulates the electrical resistances 13 and 23 at the same time. The electrical resistance 23 of the cover 20 is also provided with a limiter to avoid overheating of the cover 20 in the event of a heavy load of product in the mold 40 of the base. It will be understood that various modifications and / or improvements obvious to those skilled in the art can be made to the 5 different embodiments of the invention described in the present description without departing from the scope of the invention defined by the appended claims .
