The invention relates to a cabinet for keeping food products at a warm temperature. More particularly, the invention relates to a cabinet enclosure for the maintenance of food products, such as cooked poultry or prepared dishes, at a temperature between 63 ° C and 70 ° C at the heart of the products, whatever their location. on a shelf of the enclosure. Indeed, below 63 ° C there is a pathogenic risk and above 70 ° C there is re-cooking of the products. The food products are arranged in packaging and accessible in self-service in the cabinet which has an accessible, open or openable front face.

Document EP 2 916 692 describes an enclosure with an open front for the preservation of food at hot temperature, with thermally insulating walls, the rear face of which comprises a removable panel carrying an adjustable mechanism for fixing the temperature in the interior space.
Document EP 3 048 931 describes a showcase with several enclosures for the exhibition and preservation of food, each enclosure comprising a temperature control device, adjustable as a function of the nature of the food to be preserved, and the duration temperature maintenance.
The temperature in self-service display cases is generally adjusted by means of a thermostatic probe positioned in the food display enclosure, or near the heating resistors.
The heating of a self-service display cabinet enclosure is usually ensured by means of radiant electrical resistors and / or heated lighting lamps placed above a shelf for displaying food products. The positioning of the heating elements is ensured so as not to present any difficulty in placing and entering the food on the shelf, and of risk for the persons involved in these operations. This results in an uneven distribution of the heating.
Another heating means used for self-service display cases is a fan whose axial air flow is sent to heating resistors and then to food. This arrangement does not ensure uniformity of temperature in the display case and risks making it unfit for consumption of food products not maintained at the required temperature.
PURPOSE AND SUMMARY
The object of the present invention is to avoid the abovementioned drawbacks by ensuring uniformity of the temperature in the enclosure and maintaining the temperature between the limits of 63 ° C. and 70 ° C. under optimal conditions of energy consumption, that is to say, for example, at the nominal voltage of 230 V accessible at any location in a store, or, for large-capacity display cases, at a voltage of 400 V three phase.
The subject of the invention is a cabinet for keeping food products at a hot temperature, in which each enclosure is defined by two side walls, a bottom wall, an open or openable front face, an upper wall and a lower shelf. , characterized in that each enclosure comprises, over its entire width:
- outside and behind the lower shelf, a cylindrical turbine for air circulation;
- at the bottom of the bottom wall, vents for the passage of air from inside the enclosure to the cylindrical turbine;
- in the lower shelf, between an upper face carrying the food products and a lower face, an air passage space between the cylindrical turbine and a front hatch open towards the interior of the enclosure; and
- in the air passage space, heating elements distributed over the entire surface of the shelf, ensuring the heating of the upper face of the shelf, and of the air forced by the cylindrical turbine.
Advantageously, the front hatch open towards the inside of the enclosure is bordered towards the front by a flap ensuring the return of the air circulating in the shelf, upwards and towards the inside of the enclosure.
According to one embodiment, the front face of the enclosure is provided with a tilting door.

DETAILED DESCRIPTION
The cabinet 1 with enclosures 2 for maintaining food products at hot temperature, comprises several superimposed enclosures 2 (Figure 1). Each enclosure 2 has two side walls 3, a bottom wall 4, an open or openable front face 5, an upper wall 6 and a lower shelf 7. Behind the lower shelf 7 (FIG. 2) is arranged a cylindrical turbine 8 of which the length corresponds to the width of the shelf 7, that is to say the width of the enclosure 2. The bottom wall 4 of the enclosure 2 has, at its lower part, openings 9 arranged over the entire width of enclosure 2 (Figure 6).
The lower shelf 7 has a lower face 12, an upper face 13, and between the two faces an air passage space 20 which circulates from the rear to the front of the shelf 7 under the action of the cylindrical turbine 8. In this space 20 for the passage of air are arranged heating elements 11, which are for example electrical resistances shielded in pins, and which are distributed over the entire surface of the shelf, from the rear forward (Figure 7).
Near the front face 5 of the enclosure 2, the upper face 13 of the shelf has a hatch 14 (FIG. 2) which extends over the entire width of the shelf, and which is bordered forwards by a flap 15 ensuring the return of the air flow, circulating in the shelf 7, upwards and inwards of the enclosure 2 (FIG. 3). The presence of this flap 15 ensures that the entire flow of hot air, symbolized by the arrows 17, circulates from front to rear in the enclosure 2, enveloping all 10 of the products to be kept at hot temperature. The air flow is taken up through the openings 9 by the cylindrical turbine 8. Because the cylindrical turbine 8 has a length substantially equal to the width of the enclosure 2, the air flow circulates in the shelf and in the enclosure, practically without transverse turbulence. The air flow regularly sweeps the entire width of the enclosure, from the front to the rear, with very little exchange with the outside of the enclosure 2. It is advantageous to save energy , to have on the front face 5 of the enclosure a tilting door, which can be opened on demand (FIG. 4).
In the cabinet according to the invention, the temperature at the heart of the food products maintained at hot temperature must be between 63 ° C and 70 ° C. To ensure control of this temperature, a thermostatic probe 16 is positioned in the 'enclosure 2, pitted or not in the products. It can also be positioned in the air flow at the outlet of the hatch 14. Its threshold temperature is regulated by an electronic circuit 19 installed in the cabinet 1, for example at the base of the cabinet (Figure 1) or in a upper strip (not shown). The heating elements 11 of the lower shelf 7 provide on the one hand the heating necessary for the upper face 13 of the shelf 7, which is in contact with food products 18, on the other hand the heating of the circulating air flow in enclosure 2 under the action of the cylindrical turbine 8.
The electronic control circuit 19 makes it possible to control the nominal temperature of each enclosure of the cabinet within ranges of distinct values.
