- a transverse cutting device (3a) for cutting the head of lettuce (TS) transversely to its axis just above the trunk (TR) and forming a residue (E4) comprising the trunk (TR) and the bases of the leaves from the trunk,
- an adjustable force cutting water jet cannon (41) mounted to be adjustable so that its cutting axis (AA) intercepts the volume of the residue (E4) at the base of the leaves of the lettuce head,
- a supply of overpressurized water (47) to the barrel (41) and,
- a control unit (160) that manages the operation of the transverse cutting device (P n ), the rotating support (2) and the cutting water jet nozzle (41).

5. Industrial peeling plant of lettuce heads comprising:
- a set of rotating supports (2) for transferring lettuce heads (TS) between the entrance of the installation (100) and the evacuation of the trunk (TR) stripped of the lettuce leaves, - a supply station (Po) for load the lettuce heads (TS) on the rotating supports (2),
- a succession of cutting stations (P1, P2, P3 ...) to successively cut leaf pieces according to the products to be obtained,
- a dethroning device (4) according to claim 4, downstream of the cutting stations (P1, P2, P3 ...) to dethrone the residue (E4) cut from the lettuce head, collect the remaining leaves and remove the bare trunk and,
- a control unit (160) that manages the synchronized operation of the sealing device (4) and the other components of the plant.

6. Industrial peeling plant of lettuce heads according to claim 5, characterized in that all the rotating supports (2) for transferring the lettuce heads are formed by a carousel (1) around which the various cutting stations (P1) are distributed , P2, P3 ...) and the dethroning device (4).
