[001] The present invention relates to a pan for baking bread on an industrial scale, having a plate that acts as a lid, however being light and easy to handle. BACKGROUND OF THE I NVENTION [002] Pans for baking bread of the type known as loaf of bread on an industrial scale are already known. These pans comprise a plurality of molds for roasting and, in many cases, a plate acts as a lid for the pan. [003] The said plate, acting as a lid, is placed to prevent the upper part of the bread from curving and becoming convex, thus obtaining, as far as possible, a slice of bread with uniform square or rectangular section, which it is easy to handle. However, it has been observed that, in practice, despite the use of the lid, the existing pans obtain a slice of bread that has many irregularities or protrusions on its surface. [004] During the process for baking bread on an industrial scale, said pans move empty along chains until they reach the production chain where the dough falls into the molds. Then, the pans are covered with the said plate, which acts as a lid, and they enter the fermentation process. [005] Once the dough has fermented, the pots go into the oven to bake the dough. During the baking process, it is necessary to keep the pots covered to ensure the square shape of the bread. However, while baking, the dough can move the plate that serves as a lid. To avoid lifting the plate, it is typical to use plates or lids of great weight (6 to 8 kg), which do not move with the movement of the dough. However, these plates prevent the rapid transmission of heat and are difficult to handle. [006] The rapid transmission of heat during the baking process is essential to avoid problems in the quality of the internal structure of the bread (if the heat is not transmitted quickly this favors the formation of air bubbles). Therefore, to obtain a quick transmission of the heat during the baking process, it is convenient to reduce the thickness of the plate that configures the molds as much as possible, being equal to the thickness of the plate that acts as a lid for the pan. However, if the plate that sets up the molds is thin, the base of the mold tends to wear out easily during its movement in industrial transport chains. On the other hand, if the plate that serves as a lid is thin, this plate will move during the process of baking the bread, preventing a uniformly thick slice from being obtained. [007] To avoid wearing the pan, it is typical to use reinforcing structures that cover the pan laterally and give it resistance. However, these reinforcement structures also hamper the uniform transmission of heat in certain areas, which results in a less homogeneous baking process and which negatively affects the obtaining of a regular shaped slice of bread. [008] In the light of the above, it would be desirable to have a light pan, which guarantees a quick baking process and obtains a slice of bread with a uniform section, and which is resistant and easy to handle. DESCRIPTION OF I NVENTION [009] The objective of the present invention is to solve the aforementioned drawbacks, providing a pan for baking bread having the advantages that will be described below. [010] In accordance with this objective, the present invention provides a pan for baking bread, comprising a plurality of molds for baking, a plate that acts as a lid for said molds, and means for preventing the lifting of said plate as it the bread is baked in said molds, characterized by the fact that said means for preventing the lifting of said plate comprise a fixing device associated with a structure of said pan, such a fixing device including at least one hook that is joined together articulated to said structure, said hook being susceptible to fix a portion of said plate when it tilts in said structure. [011] The fixing device has the advantage of efficiently and safely preventing the lid from being lifted, without the need to use heavy weight plates. In particular, it has been observed that with this fixing device the weight of the lid can be reduced to about 4 kg, which positively results in a great energy saving (a faster roasting process, with less energy consumption). In addition, the pan is light and easy to handle. [012] Another advantage of the claimed pan lies in the fact that said fixing device makes it possible to implement on an industrial scale an automatic process for placing and removing the plate that acts as a lid, acting externally on said hook or on a counterweight associated with the said hook. This positively leads to an improvement in the yield of bread production. [013] Preferably, said fixing hook is articulatedly connected to an axis of a pan structure, which is interposed between two of said baking molds, with said structure being advantageously joined to the external walls of two molds of the pan. pan. Again, advantageously, said plate that acts as a lid comprises a lower portion extending from the underside of said plate, with said lower portion being interposed between two of said molds, so that it be gripped by said hook while it remains hidden under the plate, in the closed position of the plate. [014] This way, as the hook is hidden under the plate in the closed position, a compact design pan is obtained, which facilitates industrial handling while preventing accidental opening of the hook. [015] According to a different embodiment, the plate comprises an upper portion disposed transversely in a groove of the plate, with said hook being susceptible to fix said upper portion when it tilts and crosses said groove. [016] Preferably, the said fixing hook is attached to a weight, configured by means of a counterweight, to automatically tilt said hook and fix the plate, such weight being susceptible to act as a counterweight if it is operated in the opposite direction to release the plate hook. [017] In this way, the lid is very easy to put on and remove, which facilitates the industrial application of the pan. For example, the weight acting as a counterweight for the hook can be activated, at its bottom, by a piston located under the transport chain of the pan, to make the hook tilt and release the plate. Alternatively, the hook can be operated at its top to make it tilt and release the plate. These two options are represented in the figures in this application. [018] Advantageously, the structure of the pan to which the fixing hook is attached comprises a piece that acts as a stop to limit the tilting movement of the weight and said hook. [019] Again, advantageously, the upper edge of said hook has a curved profile to facilitate sliding and the upper placement of the plate that acts as a lid. [020] According to a form of incorporation of the pan of the present invention, the plate that acts as a lid comprises a plurality of recesses that act through a lid of each of said molds, where each of said recesses defines an insert "e" of the plate at the top edge of the walls of the same molds. This insert "e" allows an adjustment between the plate and the walls of the molds, which makes it possible to precisely fix the dimensions of the internal cavity in which the dough is housed during the baking process. In this way, it is guaranteed that a slice of bread with a uniform cross-section is obtained, since the dough's growth space is exactly delimited. In addition, said insert "e" facilitates and contributes to fixing the plate. [021] Obtaining a slice of bread with a uniform section according to the project, and free from irregularities in its surface, has the advantage of facilitating handling during packaging. In fact, it has been observed that uniformly sliced loaf bread facilitates the packaging process (with the use of packaging having standardized dimensions). [022] Preferably, said recesses of each plate define an insert "e" equal to or greater than 5 mm at the top edge of the walls of said molds. These recesses of the plate can be obtained through a process for embedding or stamping a plate, preferably a metal plate. [023] Advantageously, the surface of the recesses intended to cover the opening of the molds has corrugations and, preferably, these corrugations form corrugations with corrugation lengths equal to or less than 9 mm. These corrugations have the advantage of increasing the heat transfer surface of the plate during the baking process. Again, advantageously, the surface of the recesses intended to cover the opening of the molds has a cross-section with a slightly convex profile. This prevents the formation of depressions in the bread after it is baked. [024] Preferably, the corrugated surface of the recesses comprises a plurality of holes to allow the entry of hot air. This air inlet favors the rapid transmission of heat to the mass. [025] Advantageously, the pan molds comprise side walls provided with corrugations, where at least the upper edge of said walls is devoid of said corrugations, to allow the insertion of the recesses of the plate. The corrugations in the side walls facilitate the rapid transmission of heat during the baking process. [026] Preferably, the corrugations of said side walls define a plurality of ribs arranged vertically in relation to the base of said pan. It was observed that these vertical ribs facilitate the extraction of the baked bread and protect the inner lining of the molds against wear. [027] According to a preferred embodiment, said pan comprises a reinforcing structure that includes a tubular profile disposed on the periphery of said pan, such tubular profile surrounding the edges of said molds and being mounted separately from said edges, to define a space for air circulation. This tubular wrapping profile has the advantage of laterally reinforcing the pan and at the same time allowing a uniform roasting process, since the circulation of hot air ensures the rapid transmission of heat to the edges of the molds, which also translates into a significant energy savings. [028] Advantageously, the aforementioned tubular profile is mounted in such a way that it protrudes appreciably from the base of the molds, in order to protect said molds against wear. Thanks to this, the same reinforcing structure at the edges of the pan protects the base of the molds, without negatively affecting the thermal transmission of heat. All of this allows the manufacture of a resistant pan, which can be produced with plate thicknesses below 1 mm, which in turn leads to significant energy savings for the breadmaker. [029] According to the same preferred embodiment, said pan comprises means for the vertical stacking of two or more units, said stacking means including a plurality of tabs that project vertically upwards from the structure reinforcement of the pan, with the said tongues being able to be inserted in a plurality of receiving cavities associated with the reinforcement structure of another pan; the plate acts as a lid for the pan, being provided with a plurality of grooves through which said tongues pass, when the recesses of said plate cover the mold openings. These means allow the vertical stacking of the pan without the need to do without the reinforcement structure, which protects the ends and the base of the molds. [030] Advantageously, each of the said tongues is configured from a profile that defines, at its lower end, a receptacle cavity for the tongue of another pan, and at its upper end a protuberance for the insertion of said tongue in the cavity of another pot. [031] In the present invention, the recess is understood as a portion of the plate that acts as a lid, configured to penetrate the interior cavity of each of said molds. These recesses are also configured so that each one defines an insert "e" of the plate on the upper edge of the mold walls. This insert "e" allows an adjustment of the plate in the internal cavity of the molds, where the dough is housed. [032] Despite the fact that this description refers to the plate fixing device in combination with the recesses of said plate, it is necessary to note that the configuration of a plate or lid with recesses is in itself a claimable aspect of the pan. In this sense, in accordance with an aspect which is also claimable of the present invention, a bread pan is provided comprising a plurality of baking molds, a plate which acts as a lid for said molds, and means for preventing the lifting of said plate as the bread is baked in the aforementioned molds, characterized by the fact that the plate that acts as a lid comprises a plurality of recesses that act through a lid of each of the said molds, where each of the mentioned recesses defines a insert “e” of the plate on the upper edge of the walls of said molds. BRIEF DESCRIPTION OF THE FIGURES [033] For a better understanding of everything that is described, the attached drawings represent, schematically and only as a non-limiting example, two forms of incorporation of the invention. [034] In the said drawings: - Figure 1 is a perspective view of a first form of incorporating the pan, provided with four molds for roasting; Figure 2 is a top view of the pot of figure 1; - Figure 3 is a sectional view of the pan in figure 2. - Figure 4 is a perspective view of the same pan in figure 1, provided with a lid; - Figure 5 is a cross-sectional view of the pan in figure 4, showing the lid fixing device; - Figure 6 is a longitudinal sectional view of the pan of figure 4; - Figure 7 shows a detail of the sectional view of figure 6; - Figure 8 is a longitudinal sectional view of the pan lid, showing the recesses; - Figure 9 is a detail of the cover of figure 8, showing a recess and the insert “e” defined by said recess; - Figure 10 shows a perspective view of a second form of incorporating the pan; in this form of incorporation, the hooks of the plate fixing device are attached to structures of the pan, which are attached to the walls of the two molds, in a pendant manner; Figure 11 shows a top perspective view of a plate that acts as a lid for the pan of the embodiment of figure 10; - Figures 12 and 13 are two cross-sectional views of the pot of figure 10, covered with the lid of figure 11; these sections show schematically two ways of activating the hook and the weight of the fixing device to release the plate that acts as a cover. DESCRIPTION OF THE PREFERRED FORMS OF INCORPORATION OF [035] A preferred embodiment of the pan of the present invention is described below, with reference to figures 1 to 9. [036] The pan 1 of the present invention comprises four baking molds 2 and a plate 3 that acts as a lid for said molds 2. These molds 2 serve to bake, on an industrial scale, the bread popularly called "loaf of bread" . [037] Figure 1 illustrates a way of incorporating pan 1, showing the surrounding tubular profile 4 that acts as a reinforcement structure for pan 1 and protects the edges of the molds 2. This profile 4 is mounted on the fixing parts 5 integrally joined to the end walls of the molds 2. The same figure 1 shows the corrugations 6 of the longest side walls 7 of the molds 2, which have the function of facilitating the rapid transmission of heat during the baking process of the dough. As can be seen in figure 1, these corrugations 6 define a plurality of vertical ribs 6a in relation to the base of the molds 2, having the function of facilitating the extraction of the bread after baking. [038] Figure 2 shows a top view of pan 1 of figure 1, without the plate 3 acting as a lid, and figure 3 shows a cross-sectional view of said pan 1. Figure 2 shows the inlet holes of air 8 from the base of the pan 1, and the bar 9 on which the supports 20 of the hooks 11 of the fixing device 12 of the plate 3 are mounted. The ends of this bar 9 are integrally joined to the tubular wrapping profile 4 that protects the edges of the molds 2. [039] Figure 4 shows a perspective view of the same pan 1 in Figure 1, provided with the plate 3, comprising the recesses 13 that act as lid for the molds 2. As can be seen in this figure 4, the plate 3 is provided with a plurality of grooves 14 that extend longitudinally between each two recesses 13. These grooves 14 facilitate the circulation of air to favor the transmission of heat during the baking process and, in addition, allow the installation of the hooks 11 of the fixing device 12. The same figure 4 shows the air inlet holes 15, provided in the portions of the plate 3 that define the recesses 13. [040] Figure 6 shows a longitudinal sectional view of the pan 1 provided with the plate 3, having the recesses 13 that act as the lid of the molds 2. As can be seen in figure 6, the recesses 13 penetrate inside the mold cavity 2, defining an insert "e" at the top edge of the walls. The same figure 6 shows the corrugations 16 of the surface of the recesses 13 and the sectional view of the surrounding tubular profile 4. This profile 4 acts as a reinforcement and is mounted separately from the edges of the molds 2, in order to define a space 17 for the air circulation. In addition, as can be seen in the cross-sectional view, the tubular profile 4 projects from the base 2a of the molds 2 to protect said base 2a from wear caused by contact with the industrial transport chains. In this way, the thickness of the sheet from which the molds 2 are manufactured can be less than 1 mm, preferably with a thickness of 0.8 mm, to facilitate maximum energy savings. [041] It has been observed that the existence of this reinforcing tubular profile 4 prevents the vertical stacking of pots 1, since they do not allow the introduction of a mold 2 of a pot 1 into the mold of another pot similar to the one claimed here. To avoid this inconvenience, the present invention proposes vertical stacking means that include tongues 18 that extend vertically upwards towards the tubular reinforcement profile 4, which can be inserted into receiving cavities associated with the reinforcement structure or profile of another pan similar to the one claimed. [042] In the embodiment described, each of the said tabs 18 is configured by a profile that defines, at its lower end, a receptacle cavity 19 of the tongue of another pan, and at its upper end a protuberance 18a for insertion of said tongue 18. [043] Returning to plate 3 having recesses 13 that act as a cover, figure 9 shows a detail of the longitudinal section of plate 3 in figure 8, where the slightly convex profile of said recesses 13 can be seen, which in this case was obtained embedding plate 3, defining a convexity having a height "h" of 2.20 mm. The same figure 9 shows the corrugations 16 of the plate 3, which facilitate the transmission of heat during the baking process, as well as the insert “e” to allow the adjustment with the upper edge of the mold walls 2. [044] Figure 7 shows a detail of the longitudinal section view of pan 1, where the insert “e” of a recess 13 of plate 3 is observed, which acts as a lid on a mold 2 of the end of pan 1. How can it be seen in this figure 7, the recess 13 penetrates into the mold cavity 2 to precisely adjust the upper edge 7a of the walls 7, to precisely delimit the dough growth space. The same figure 7 shows how the edge 7a of the walls 7 of the mold is free of corrugations, to allow the insertion of the recess 13 of the plate 3. [045] Now returning to the fixing device 12 of the plate 3, figure 5 is a cross-sectional view of the pan 1 of figure 3, in which said device 12 can be seen in detail. As can be seen in this figure 5, in the form of embodiment described, the fixing device 12 comprises a pair of hooks 11 which are hingedly connected to one end of a vertical support 20, which is connected to a bar 9 integrally attached to the wraparound tubular profile 4. Each hook 11 automatically tilts to the closed position, thanks to a weight 21 associated with the hook body 11. When tilting to this closed position, each hook 11 passes through a groove 14a of the plate 3 to taking a portion 3a of said plate 3 by means of a fixing member 11a. The same figure 5 shows the rounded upper edge of the hooks 11, to facilitate the upper sliding of the plate 3 and the tilting of the hook 11. [046] The claimed fixture 12 has the advantage of being very simple, effective and safe. In addition, it allows you to reduce the weight of the lid to approximately 4 kg, which results in less energy consumption during the baking process. On the other hand, said fixing device 12 is very easy to be applied industrially, thanks to the automatic closing system. Pan 1 is light and resistant, and guarantees the obtaining of a slice of bread with a regular section, since the recesses 13 effectively delimit the cavity for baking the bread. [047] A second embodiment of the present invention is described below, with reference to figures 10 to 13. [048] The form of incorporation of pan 1 shown in figure 10 is different from the form of incorporation mentioned above in that the fixing device 12 is associated with a pair of structures 22 of pan 1, interposed between two molds 2, in order to that they are attached to the walls of said molds 2, in a pending manner. Each of said structures 22 includes an axis 23, to which a fixing hook 11 of the plate 3 that acts as a lid is hingedly attached. The hooks 11 can tilt on the axes 23 to each catch a lower portion 3b of the plate 3. [049] As in the previous embodiment, the hooks 11 automatically tilt to the closed position, thanks to a weight 21, configured by means of a counterweight, associated with the body of the hook 11. However, in this form of incorporation, the hooks 11 remain hidden under the plate 3 in the closed position of the plate 3, which provides a more compact design that further facilitates the handling of the pan 1 in the production chain (see figures 12 and 13). [050] As can be seen in the sectional views of figures 12 and 13, in this embodiment the plate 3 that acts as a cover includes a pair of lower portions 3b that extend from the underside of the plate 3, from so that they can be caught. Figure 11 shows a top perspective view of the plate 3, where said lower portions 3b can be seen. [051] Figures 12 and 13 show the axes 23 on which the hooks 11 tilt, and part 24, which acts as a stop to limit the movement of the hooks 11. As can be seen in these figures, in the closed position of the plate 3 the hooks 11 secure the lower portions 3b, while remaining hidden under the plate 3. [052] As mentioned in the description of the invention, both hooks 11 and weights 21 can be driven by a piston or equivalent member, to automatically and continuously release plate 3 without having to stop the production chain. For example, figure 12 schematically represents a piston 25 arranged to drive, from the bottom of the pan 1, the weights 21, and to make the hooks 11 tilt in order to release the plate 3. [053] Figure 13 represents an alternative way to release the same hooks 11, by means of a drive member arranged to simultaneously press the edge of the hooks 11 and make the weights 21 tilt in order to release the plate 3. [054] Despite the fact that reference has been made to a specific embodiment of the invention, it is evident to a person skilled in the art that numerous variations and modifications can be introduced into pot 1 described here, and that all the details mentioned can be replaced by technically equivalent ones, without departing from the scope of protection defined by the attached claims. For example, although in the present invention the fixing device 12 has been described in combination with a plate 3 provided, preferably with recesses 13, the same device 12 can be useful when applied to a pan provided with a conventional plate, with this device 12 constituting a claimable aspect of the present application. Likewise, although the fixing hook 11 has been described in figures 1 to 9 as hingedly connected to an axis of the bar 9, through a vertical support 20, the same hook can be joined or articulated directly to a bar or a part of the pan structure in which it is placed, so that it allows the weight 21 to act on the bottom or base of the pan, as shown in figure 12. This detail allows the lid to be automatically opened from the base, causing the hook to tilt.
