Field of the invention
The invention relates to a barbecue with a vertical hearth provided with at least one particle filter.
State of the art
Two types of barbecue are commonly found on the market: horizontal grills and vertical grills.
The barbecues with horizontal hearth have the disadvantage of subjecting the food to a sweeping by the smoke of the combustion, in particular the smoke resulting from the combustion of the greases which flow from the food supported by a horizontal cooking surface (grid) on the incandescent fuel located under this hob. This sweeping affects the sanitary quality of food.
Vertical grills overcome this disadvantage of horizontal grills. They generally consist (Fig. 1/5), in a manner known per se, of a vertical heating hearth (a) containing the fuel (b), of a hopper (i) to facilitate the introduction of the fuel into the hearth, one or more food holding devices, positioned parallel to the hearth and facing it, an ash collecting tank (h) and a container for collecting fat (e).
By "food holding device" means any device intended to hold the food in place relative to the vertical hearth such as by
BE2017 / 0051 example a wire cage (c) containing the food (d), a spit or skewers (not shown).
The hearth (a) generally consists, in a manner known per se, of a vertical basket, at least one wall of which, vertical or oblique, is perforated. By “perforated wall” is meant a wall having openings. Usually, the basket includes two perforated walls, arranged opposite one another.
The hearth (a) is intended to receive incandescent fuel (b) which emits infrared radiation (g) responsible for cooking food. The wall openings are necessary in order to allow infrared radiation to pass freely.
However, vertical barbecues have a drawback which makes their use complicated.
In fact, the hearth (a) is generally made up of heavy metal structures, of cast iron or thick steel sheets. These structures, essential for the hearth to be able to resist the high temperatures to which it is subjected, are on the other hand an obstacle for the free passage of the infrared rays.
In order to allow sufficient free passage to the infrared rays, the walls of the vertical baskets generally have large surface openings which are the source of a disadvantage of vertical barbecues. During combustion, small particles are generated in the hearth, such as ashes or small pieces of incandescent fuel resulting from combustion or created by the crackling of embers.

In windy conditions, these small particles can be carried out of the hearth through the openings in the walls of the hearth and deposit on the food during cooking. Although non-toxic in nature, these particles can negatively affect food in terms of aesthetics, cuisine and taste.
Description of the invention
The invention aims to remedy the drawback described above, known vertical barbecues described in particular in documents EP 2949246 A1 and DE20 2014 007487 Ul.
The invention aims more particularly to prevent said particles from depositing on food during cooking by the presence (Fig 2/5) of a protective filter (f) disposed substantially vertically between the vertical hearth (a) containing the fuel and the food holding device located opposite the vertical hearth (for example a wire cage: c).
By "fuel" means any solid fuel suitable for use in any type of barbecue such as for example charcoal, charcoal, wood, or agglomerated briquettes (coconut briquettes or various coals).
The protective filter according to the invention is not very permeable with respect to said particles, and sufficiently permeable with respect to infrared radiation in order to ensure a reasonable cooking speed.
The protective filter according to the invention consists of an essentially flat metallic structure, preferably made of steel or steel
B E2017 / 0051 stainless, containing openings delimited at their periphery by separating elements such as wires (canvas, sieve or wire mesh) or strips, (expanded metal).
The choice of protection filter is determined by the surface of the openings and the thickness of the separating elements. These two elements determine the threshold for the filtration capacity of the particles as well as the permeability with respect to infrared rays.
The permeability to infrared rays of the protective filter can be compared to its light transparency, or percentage of "day seen". It is measured by dividing the area of the openings of the metal filter by the total area of the filter (area of the openings + areas of the separating elements).
In order to determine the optimal surface area of the openings, tests have been carried out with protective filters made up of metallic fabrics having square openings of different surface areas and of similar transparency (around 50%). The results are shown in Table 1/2 below.
The abbreviations used in Tables 1/2 and 2/2 have the following meanings:

The tests described in table 1/2 above show that an opening surface of less than 1 mm2 is necessary to ensure sufficient impermeability with respect to the particles emitted by the vertical hearth. An opening of less than 0.53 mm2 is even better.
On the other hand, a 4 mm2 opening surface proved to be moderately effective, because many particles passed through the filter. An opening area of 9 mm2 proved to be ineffective because practically all the particles passed through the filter.
In order to determine the size of the separating elements of the filter openings, tests were carried out with metallic fabrics having an opening surface of 1 mm 2 but having a different transparency due to the variable thickness of the wires (separating elements). located on the periphery of the openings.

These tests show that a transparency of more than 40% is necessary to ensure sufficiently rapid cooking.
If the protective filter does not have sufficient inherent rigidity, it will advantageously be mounted on a rigid peripheral frame.
Preferably, the protective filter according to the invention is removable.
The protective filter according to the invention can be placed on the vertical barbecue in a fixed or removable manner, by any suitable means (for example nuts, screws, clips, hooks, or by magnetization). An example of attachment is shown in Figure 4/5 and 5/5. The male hooks (n) which are integral with the frame (m) of the protective filter (not shown) fit onto the female hooks (o) which are integral with the vertical barbecue.
The protective filter according to the invention can also advantageously be placed removably on a wire cage (c) containing the food (d).

An additional protective panel (Fig 2/5) can advantageously be added horizontally (j) above the protective filter in order to prevent particles emitted by the hearth upwards, via the upward convection currents, from going back down and getting place on food. The protective panel (j) has a size such that it covers the food (d).
Side protection panels (not shown in Figure 2/5) can also be added vertically and perpendicularly to the hearth on both sides of the device containing the food. A rear vertical panel (Fig 2/5, k) can also advantageously be added parallel to the hearth in order to constitute, with the fat-collecting container (e) a completely closed enclosure comprising the device containing the food.
Said side and rear panels can be solid walls or consist of a metallic structure identical or similar to the protection filter described above.
The invention also aims to provide a barbecue of the vertical hearth type, in which is inserted in a removable or fixed manner, at least one protective filter as described above.
Another object of the invention is to provide a barbecue of the vertical hearth type, in which all of the combustion gases which pass through the perforated walls of the basket constituting the hearth are filtered by one or more protective filters (1) such (s) as described above so as to prevent particles from being carried outside the hearth (Fig 3/5).

Since the fine material used for the protective filter (for example canvas or a metal screen) may not withstand high temperatures for a long time, the filter is preferably positioned at a sufficient distance from the hearth so as to avoid overheating.

1. Barbecue with vertical hearth comprising, on the one hand, a vertical basket for a fuel, of which at least one vertical or oblique and perforated wall and, on the other hand, a device for holding food facing the basket, characterized in that at least one protective filter is positioned substantially vertically between the above-mentioned perforated wall of the basket and the food holding device, the protective filter being pierced with openings of less than 4 mm2 and having permeability to infrared rays at least 39%.

2. Barbecue according to claim 1, characterized in that the openings of the protective filter have an area of less than 1 mm 2 and a permeability to infrared rays greater than 40%.
