Prior art
The published patent document EP 1 064 847 B1 discloses a dough gripper for transferring a fermentation unit to an oven for baking in the form of a waffle. Dough pieces leave the fermentation unit on trays arranged transversely on a first conveyor. A gripper comprising, essentially, two arms pivoting and supporting, each, several teeth, is configured to grasp one or more dough pieces on the tray by penetration of the teeth in said dough or dough pieces. The gripper, in addition to the pivoting of its arms, is movable vertically and horizontally. After gripping the dough (s), the gripper moves upwards and then laterally towards a second conveyor in order to deposit the dough (s). In this case, the second conveyor comprises waffle molds intended to cooperate with counter-molds to form the dough and bake through an oven. The device disclosed in this document is interesting in that its gripper is particularly suitable for gripping dough pieces which are, by definition, malleable while having some cohesion. Depending on the composition of dough pieces, this solution may not be adequate. Indeed, in certain situations, the dough can flow, that is to say deforming by flattening, especially under the effect of the ambient heat and / or simply beyond a certain period of time. Published patent document US2012 / 0032460 A1 discloses a gripper for pastry dough. It includes two arms pivoting and curved so as to maintain a generally round shape to the dough. These arms include a generally flat bottom edge for scraping the surface of the dough-carrying conveyor. This gripper is interesting for gripping dough pieces whose round shape must be preserved or even shaped, especially for pastry products baking without mold. For dough pieces intended to be flattened to form including waffles and biscuits, the advantages of such a clamp are limited. In addition, for dough that can fl ow and flatten naturally, the lower scraper edge may tear or even miss the dough material. Summary of the invention
TECHNICAL PROBLEM The invention aims to provide a gripping solution of pastry dough that is more effective, especially when the dough tend to flow.
TECHNICAL SOLUTION The subject of the invention is a device for handling pastry dough pieces, comprising: a conveyor in a longitudinal direction; at least one dough receiving tray, intended to be arranged on the conveyor; at least one dough gripper on the receiving tray for movement thereof; remarkable in that the or each of the reception trays comprises longitudinal walls adapted to contain the dough pieces for gripping by the or gripping tongs.
According to an advantageous embodiment of the invention, the longitudinal walls are spaced from each other by a distance W of between 25 mm and 80 mm, preferably between 30 mm and 70 mm, more preferably between 40 mm and 60 mm.
According to an advantageous embodiment of the invention, the longitudinal walls are generally vertical or form an angle of less than 30 °, preferably less than 20 °, with the vertical.

Advantages of the invention

Description of an embodiment
Figure 1 schematically illustrates a facility for producing pastry products such as waffles, according to the state of the art. The installation 2 comprises a dough preparation and dispensing unit 4. More specifically, the unit 4 extrudes dough pieces 8 'on the trays 10' of the conveyor 6. These dough pieces 8 'are then conveyed to a fermentation unit 12 in order to raise the dough pieces under appropriate temperature conditions, well known to those skilled in the art. Once raised, the dough pieces are conveyed outside the fermentation unit by the conveyor 14. The dough pieces, which have grown in size, are then picked up by a gripper device 16 comprising one or more clamps 18 suspended via a rod. to a guide rail 22. Each of the clamps 18 is configured to grab a dough, undergo a lifting movement followed by a translational movement to the conveyor 24 equipped with molds 28. The dough pieces are then released by the clamps on the molds 28 of the conveyor 24. The latter is configured to subject the dough pieces to a shaping by applying against-molds 28 arranged on an auxiliary conveyor 26. The molds and contre-molds 28 applied against each other are then conveyed to an oven 30 for cooking dough.
In the description which has just been made with reference to FIG. 1, the dough pieces 8 'and the trays 10' are in accordance with the invention.
FIG. 2 illustrates a seizure failure situation of a dough 8 different from dough pieces 8 'of FIG. 1 in that it is capable of flowing while flattening. It can be observed that the teeth 182 of the clamp 18, supported by the arms 181, pass over the paddle 8 during the pivoting movement of the arms 181.
FIGS. 3 to 8 illustrate elements of a handling device according to the invention, it being understood that these elements are applicable to the production installation 2 illustrated in FIG. 1. The elements 8, 10 and 32 which are going to be described in connection with Figures 3 to 8 then replace the elements 8 'and 10', the rest being identical or almost identical.
Figures 3 to 7 illustrate a tray for receiving dough fluent, according to the invention. Depending on various parameters, such as the flour involved in its composition, the dough may be more malleable and fluent. This is particularly the case when flour is soy flour.
The plate comprises a U-section section 10 oriented along the longitudinal axis of the conveyor 14 (FIG. 1). The profile 10 comprises a bottom wall 101 and two longitudinal side walls 102. These two longitudinal walls 102 serve to contain the dough 8 by laterally limiting its flow. The dough 8 thus retains a minimum height, greater than that of the longitudinal walls 102.
The teeth 182 of the clamp 18 can thus properly contact and penetrate the dough 8.
The longitudinal walls 102 may have front and rear edges 103 bevelled. In this case, they can be generally inclined at an angle to the horizontal, this angle can be between 30 ° and 50 °, preferably between 40 ° and 50 °.
The useful height h of the longitudinal walls 102 may be between 2mm and 40mm, preferably between 5mm and 30mm.
The maximum length L of the longitudinal walls 102, that is to say, overall, the longitudinal walls 102 may be between 60mm and 200mm. The minimum length I of said wall is a function of the length L, the height h and the angle a.
The distance W between two longitudinal walls 102 defining a receiving zone of a dough may be between 25mm and 80mm, preferably between 30mm and 70mm, more preferably between 40mm and 60mm.
The longitudinal walls 102 advantageously form with the bottom wall 101 a fillet of connection with a mean curvature angle R between 1mm and 10mm, preferably between 1mm and 5mm.
The profile 10 is advantageously made of metal, in this case stainless steel. It may have a wall thickness of between 0.5 mm and 3 mm, preferably between 1 mm and 2 mm.
The bottom wall 101 of the profile 10 may comprise a recess 104, ideally arranged longitudinally in the center of said profile. This recess may have a length of between 40mm and 60mm. It can extend transversely over more than 50% or even more than 80% of the width of the profile. It may have a depth greater than 1 mm, preferably at 1.5 mm. The advantage of this recess is to center the dough 8 during its creep. Indeed, if the dough is not perfectly centered longitudinally on the section 10, during its creep, the material of the dough will naturally tend to flow to the recess 104, which will then refocus the dough.
FIG. 8 illustrates a handling device according to the invention and comprising longitudinal walls conforming to those illustrated in FIGS. 3 to 7. More specifically, U-section sections 10 are arranged on a cross-member 32 which is itself , Supported by the conveyor 14. The profiles 10 are preferably attached to the cross members 32, for example by screwing. The sleepers 32 may be made of folded sheet.
As can be seen in FIG. 8, each of the crosspieces 32 comprises a main portion 321 that is generally flat and generally rectangular with front and rear edges corresponding to the long sides of said rectangle. It may comprise attachment portions 322 located at the front and rear edges, under the main portion 321. These attachment portions 322 are configured to cooperate with hooking means (not shown), particularly in the unit of FIG. fermentation in order to move them in vertical directions.
The clamp 18 illustrated in FIG. 8 is multiple in that it comprises transverse supports 183 for the teeth 182, these supports extending transversely so as to cover several dough receiving zones, in this case all of said zones. . In this way, a single gripper 18 can ensure the gripping doughs of a cross member 32. It is also possible to provide several grippers of this type distributed longitudinally so as to grasp the dough pieces of several sleepers in a single operation.
The realization of the longitudinal walls by means of sections 10 of U section disposed on the cross members 32 is an embodiment, it being understood that these walls can be made otherwise. By way of example, they can be fixed directly to the crosspieces, in particular by welding or screwing.
