For applying decorative images on a multi-layered surface of a coffee, especially on the espresso crema, a focused jet of air is drawn across the surface for drawing or writing. On the one hand, the air jet pushes the crema locally to one side, on the other hand it whips the crema together with black coffee, limited to the smallest space, so that the crema discolors there. To carry out the method, a pin is used in the manner of a writing instrument, which comprises a compressed air source and a switching element, in particular a metering valve for the air jet, as well as a housing (1,10,16) of the pin superior air guide tube (9,15,21) as a drawing or writing tip contains. The compressed air source may include a pump (2) and an adjoining compressed air vessel (6) with check valve (5) to the pump (2) and a metering valve (7) to the air guide tube (9). Coffee, in particular on the espresso crema, and a device for carrying out the method.
Today coffee is mostly served in the coffee cup with a light top layer on the surface. This top layer is created automatically in espresso machines and is referred to as crema. A top layer similar to the crema can also be produced using a small amount of milk foam. In the case of simple espresso machines, additional structural measures are provided in order to form a surface in the manner of a crema.
In some coffeehouses or espressos, the surface of coffee is decorated with chocolate powder, by skillfully guiding a jug with milk foam when pouring it onto the surface, or by using a pointed stick, with the help of which ornaments can be drawn into the crema or the like.
A very complex device is also known, which draws preprogrammed representations on the surface of a coffee using a commercially available plotter. A mostly brown food coloring is used instead of ink.
The invention aims to provide a method for applying decorative representations on a multilayer surface of coffee in the coffee cup, which leads to the goal with little effort, without ingredients and permanently. This is achieved by moving a focused air jet across the surface for drawing or writing. The air jet has a low intensity, which is sufficient, however, to penetrate the crema or the like and to mix it with the air or the black coffee underneath it in a targeted manner. If the air jet is guided, lines with a different color are created on the light crema or the top layer. The effect lasts for a long time. The lines, which represent a flower or a monogram, remain for a long time

Time sharp without melting. An ornament or a monogram is still clearly visible after about 15 minutes.
The invention also relates to an apparatus for performing the method. This is characterized in that a compressed air source and a switching element, in particular a metering valve for the air jet, as well as a preferably longitudinally displaceable air guide tube are provided in a housing of a pen, which is similar to a writing instrument.
The pen contains all components to create a focused air jet. The pen is self-sufficient and can be carried easily. The switching element enables sensitive switching on and off and dosing of the intensity of the air jet when drawing and writing. In a special embodiment, the switching element is located as a metering valve next to the symbol tip on the casing of the housing and is actuated with the index finger. The intensity control of the air jet is possible in this way by changing the pressure of the index finger on a spring-loaded pusher of the switching element.
A pump with a compressed air vessel connected to it - with a check valve at the inlet and metering valve at the outlet - can be provided as the compressed air source. Similar to a mechanical pencil, a button that protrudes at the upper end is pressed in several times against spring force. The air compressed in a cylinder thereby enters the compressed air vessel, a non-return valve enabling pressure to be built up. The air jet at the tip of the air guide tube is switched on and regulated via a metering valve.
It is also possible to use a replaceable capsule filled with compressed air in the pen as the compressed air source. When the pin is screwed together or a cap is screwed on, a membrane of the capsule is broken and the air jet can now be switched on with a pressure reduction and the metering valve and its intensity can be regulated as required.

A particularly advantageous embodiment of the invention is characterized in that a blower driven by an electric motor is provided as the compressed air source and an electrical switch, if necessary with voltage regulation, is provided in the housing as the switching element. The components are so compact that they can easily be accommodated in the pin housing with a diameter of approximately 12 to 15 mm and a length of 80 to 100 mm. The intensity of the air jet is regulated via the speed of the fan (fan, turbine).
Such a pen according to the invention can be attached to any espresso machine in a holder and is thus immediately available during the production of the coffee.
Automation is possible if the latter pen can be moved under computer control in a holder of a plotter in the x and z directions. The method is primarily and the devices described are intended for simple, inexpensive use which is available at all times in order to be able to achieve a surprising effect easily and without self-supply, to a certain extent in a self-sufficient manner.
Exemplary embodiments for carrying out the method are shown schematically in the figures.

1, a pump 2 is accommodated in a tubular housing 1 of a pin, the piston 3 of which can be actuated by means of a pusher 4. The pump is connected to a compressed air vessel 6 via a check valve 5 (ball valve). At the output of the same is a metering valve 7, which can be opened more or less by means of a button 8 depending on the button press. Connected to the metering valve 7 is a telescopic air guide tube 9. This acts as a 4/9 character tip or writing tip as soon as a jet of compressed air is released via the button 8. The tube tip is guided just above the crema or the surface of the coffee and in this way decorative representations or lettering can be applied to this surface.
An embodiment according to FIG. 2 again comprises a slim tubular pin housing 10 with a screw cap 11 at the upper end. In the upper part of the housing there is space for an exchangeable capsule 12 with compressed air. After insertion, the latter is pressed against a hollow mandrel by screwing on the screw cap 11, a sealing membrane of the capsule 12 is pierced and the compressed air is made available. A subsequent metering valve 13 with pressure reduction is actuated by a button 14. The deeper the button 14 is pressed against the spring force into the housing, the more air gets into the subsequent air guide tube 15. The pen according to FIGS. 1 to 3 is held similarly to a writing instrument and the metered switching on of the focused air flow takes place for drawing or writing on the crema or surface of the coffee in the cup.
According to FIG. 3, an exchangeable battery 17 and an electric motor 18 are provided in the upper part of a circular cylindrical pin housing 16, which drives a fan wheel of a blower 19. Suction openings 20 are provided in the housing 16. The air flow from the blower 19 passes through a nozzle into an air guide tube 21 to the tip of the tube, where it exits. A switching element in the form of an electrical switch 22 applies the voltage of the battery 17 to the electric motor 18. This switch is actuated with the aid of a button 23. The switching arrangement can also be designed as a speed controller for the electric motor 18.
