专利说明:
The invention relates to a small brewing system with a brewing container having a bottom part, a preferably insulated housing shell and a head part with at least one opening, and a method for producing beer. The production of beer in microbreweries and microbreweries is becoming increasingly important, because in this way it is possible to take special account of the craftsmanship aspects of production. Likewise, in the private sphere, beer brewing is becoming more and more of a hobby, requiring correspondingly easy-to-use and space-saving appliances. It is therefore an object of the invention to provide a device for the production of beer, which is inexpensive and easy to handle. This object is achieved in that the brewing container is rotatable about its longitudinal axis and independently thereof is additionally pivotable. The device according to the invention makes it possible to carry out beer brewing essentially in a single container, without the need for complicated installations in the brewing container for this purpose. Here, in a preferred embodiment of the invention, it is provided that the brewing container is rotatably mounted in a suspension, wherein the suspension allows pivoting of the axis of rotation of the brewing container. Thus, the brewing container can, if necessary, rotate about its longitudinal axis. Likewise, the brewing container can be pivoted, with or without simultaneous rotational movement. In the production of beer, in a first step, the malt is mashed to remove the malt ingredients. Here, the malt is mashed in warm water and the brewing container according to the invention tilted and rotated in self-rotation to accelerate the dissolution process. For this purpose, it is provided in a particularly preferred embodiment of the invention that in the brewing container, a stationary stirring element, preferably with at least two wing elements, is arranged, wherein the stirring element is arranged parallel to the axis of rotation of the brewing container. This stirring element is arranged rigidly outside the longitudinal center axis of the brewing container, wherein the mash is moved by the rotary movement of the brewing container at an inclined axis of rotation of the stirring element with its stirring blades and this is mixed intensively. The stirring element is preferably provided with a temperature sensor that allows monitoring of the temperature within the brewing container. The mashing is always carried out at higher temperatures, usually at about 45 ° C, so that a temperature of the contents of the brewing container is necessary. In a further preferred embodiment of the invention it is therefore provided that in the brewing container Temperierungselemente, in particular cooling elements and heating elements, and sieve and filter elements, preferably introduced via an opening in the head part of the brewing container can be arranged. Thus, the heating of the mash is carried out in a variant of the invention by means of water vapor, which is externally generated and introduced via a tube-tube element in the brewing container. After completion of mashing, the malt must be separated from the mashed liquid, the wort. For this purpose, the liquid is poured from the brewing container and collected via a sieve, the so-called Läutersieb. Here, the brewing container according to the invention is pivoted in the suspension about its axis of rotation, for example by 90 °, to facilitate the pouring of the beer wort over an opening located in the head part. By introducing hot water residues are removed from the malt remaining in the brewing container in the so-called tending and also added to the beer wort. After removing the solids, the so-called spent grains from the brewing container and the cleaning of the brewing container, the beer wort is returned to the brewing container, mixed with hops and reheated. In this wort boiling, the heating is again by the introduction of water vapor. Subsequently, the solids produced during wort boiling, the hot trub, must again be removed from the wort by decantation, which is accomplished by pivoting the brewing container. As already after mashing, the wort is poured off via a filtration element into an intermediate container and the hot trub is removed from the brewing container. After recycling the wort in the purified brewing container, this is cooled, which according to the invention in turn a tempering, in this step, a cooling coil, is provided, which is inserted through the opening in the head part of the brewing container. Finally, yeast is added to the cooled wort to initiate the fermentation process. Again, there is still a corresponding temperature on the tempering. Since carbon dioxide is formed during the fermentation process in addition to alcohol, the brewing container preferably has at least one pressure compensation element, in particular a valve, to which, if appropriate, a dispensing head can be arranged. After completion of the fermentation process, the yeast is separated by decantation, and the resulting beer can be filled either in the brewing container or in a storage container for further storage. In a particularly preferred embodiment of the invention, it is provided that the brewing container is a reusable cask, in particular a keg. A keg is a reusable steel keg usually used in the catering industry, with a capacity of mostly 30 or 50 liters. On the head part in the middle of a valve, the so-called keg head is attached to which a tap head can be connected. The use of the keg has the advantage that after fermentation and separation of the yeast, the beer stored in the brewing container and can be bottled directly from it, while possibly cooling the beer at the same time on the tempering, namely the cooling coil takes place. The object is further achieved by a method for producing beer according to the invention in that the temperature is controlled by at least one Temperierungselement which is inserted through at least one opening of the brewing container, preferably through an opening in the head part of the brewing container. Particularly preferably, it is provided that the heating of the mash and the wort boiling by introduction of water vapor over the at least one opening of the brewing container takes place. Alternatively or additionally, the temperature control takes place during wort cooling, fermentation and possibly storage by means of a cooling coil, which is preferably connected to a heat exchanger. The invention is explained in more detail below with reference to a non-limiting exemplary embodiment with associated figures. Show here 1 and 2 in a schematic sectional view of the invention Kleinbrauanlage during mashing, Fig. 3, the Kleinbrauanlage of FIG. 1 during the lautering and Abschwänzens, 4 shows the small brewing plant from FIG. 1 during decantation, FIG. 5 shows the small brewing plant from FIG. 1 during wort boiling, FIG. Fig. 6, the Kleinbrauanlage of FIG. 1 during wort cooling, and Fig. 7, the small brewing system of FIG. 1 during fermentation and the Storage of the produced beer. As shown in FIGS. 1 and 2, the microbrewing system 100 according to the invention has a brewing container 110, which in the case of this embodiment of the invention is a keg. The brewing container 110 is designed here with an insulated housing jacket 111, a bottom part 112 and a head part 113. The brewing container 110 is in this case arranged in a suspension 200, which allows a rotation of the brewing container 110 about its longitudinal central axis A. Furthermore, the brewing container 110 is also pivotable, wherein its longitudinal central axis A, which is simultaneously its axis of rotation, is pivoted out of the vertical. The Kleinbrauanlage shown here 100 is similar to a drum mixer for concrete constructed in this variant of the invention, the suspension 200 allows with a suitable drive 210, the self-rotation of the brewing container 110 and the pivoting of the brewing container 110 by means of a manual pivoting device 220, such as a handwheel. Finally, the suspension 200 is designed movable, so that the small brewery 100 can easily change their location. For the first step of brewing, the mash is introduced into the brewing container 110 and heated by means of steam. For this purpose, the steam is introduced into an external generator 300 via a hose-pipe line 310 via a first opening 114 in the head part 113 into the interior of the brewing container 110. Furthermore, in the interior of the brewing container 110, a stirring element 320 with stirring blades 321 is arranged substantially parallel to the longitudinal central axis A of the brewing container 110. The stirring element 320 furthermore has a temperature probe 330, which supplies information about the temperatures prevailing in the interior of the brewing container 110. During mashing, the brewing container 110 rotates about its longitudinal axis A, which is preferably pivoted by an angle α of about 20 ° from the vertical. As a result of this inclination of the brewing container 110, the mash is brought into contact with the stirring element 320 during simultaneous self-rotation of the brewing container 110 and mixed optimally without requiring complicated agitators for this purpose. After completion of the mashing, the stirring element 320 is removed and a sieve element 340 is introduced into the brewing container 110 (FIG. 3). About this Läutersieb done refining, namely the separation of the wort from the solids, the leached malt. To skip the wort, the brewing container 110 is pivoted into a substantially horizontal position. After removing the wort is swelled and the supernatant liquid is also decanted into an intermediate container 341 (Fig. 4). FIG. 5 shows the operating state of the beer brewing system 100 according to the invention during the wort boiling, wherein the introduction of steam again serves to heat the wort. Here, the brewing container is in an upright position without self-rotation. A second opening 115 in the head portion 113 of the brewing container 110 allows the escape of the resulting during wort boiling steam. After the separation of the hot trub by decantation as shown in Fig. 4, the cooling of the wort is again carried out in an operating position shown in FIG. 6, wherein the cooling takes place by means of a cooling element 350, which is preferably designed as a cooling coil. The cooling element 350 is again passed through the second opening 115. Since a suppression results in the cooling of the wort in the brewing container 110, a pressure compensation device 116 in the form of, for example, a valve is provided in the head part 113. During fermentation and storage, the brewing container 110 is in an upright position (FIG. 7), wherein inside the brewing container 110 preferably the cooling element 350 is passed through the second opening 115, while a tap head 360 with gas feed 361 and tap 362 is arranged at the central first opening 114 of the head portion 113 of the brewing container. It is understood that the present invention is not limited to the above-described embodiment. Rather, different stirring elements, cooling and heating elements and other elements suitable for beer production and apparatus for arrangement in and on the brewing container can be provided. Essential to the invention is that the brewing container is rotatable about its longitudinal central axis, and its longitudinal central axis is independent of the rotational movement pivotable.
